Autumnal Treats!

Hey Fantasy Lovers! Here we are with a new blog post! This one is on Autumn as we are in Autumn now. So to kick us off, the team and I are excited to announce that we now have an Instagram page! Follow us at fantastic.fantasy.series we will be posting new stuff on here like blog posts, recommendations and much much more! Now let's get into this blog post!

First off, we have some winter books that you can snuggle up and read in bed. Second, we have some warm autumn treats for you to try let us know how they go in the comments! And lastly we will have a riddle for you to solve, post the answer in the comments section!


Book Recommendations -


Snow and Rose by Emily Winfield Martin

This is a personal favorite of the Team and we highly recommend it.

Underwater Adventure by Willard Price

Beyond the Bright Sea by Lauren Wolk

Crow lives on Cuttyhunk, a tiny island off the coast of Massachusetts, having been rescued as a baby from a small boat set adrift from the opposite island of Penikese. But Penikese was once a leper colony, and Crow can't help but wonder if she will develop the disease one day too.

Autumn Treats!


Spice Cupcakes


Ingredients -


1 and a half cups plain flour

3/4 of a tea spoon baking powder

1 and a half tea spoons cinnamon

Half a tea spoon ground ginger

Half a tea spoon nutmeg

Half a tea spoon mixed spice

2 eggs

Half a cup butter

1 cup brown sugar

1 tea spoon vanilla extract

Half a cup of milk


Method -


  1. Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit), the line a 12 cup muffin pan, set aside for later.

  2. Whisk the flour, baking powder, cinnamon, mixed spice, nutmeg, and ginger all together, Set aside.

  3. Using a handheld or electric mixer with a spade attachment, beat the butter on high speed for one minute until it is light and fluffy. Add the brown sugar and beat for a further one minute. Add in the eggs and vanilla extract. Beat until just combined.

  4. With the mixer o low speed add the dry ingredients to the wet ingredients until just incorporated. Wit the mixer still running, slowly pour in the milk until combined. Do not overmix. The batter will be slightly thick

  5. Pour the mixture into the prepared cake pans and cook for 19-22 minutes or until golden brown.

  6. Allow to cool before eating. Enjoy!


Sticky Apple Walnut scrolls


Ingredients -


Half a cup walnuts (optional if you're allergic to nuts)

Half a cup of honey

2 cups self raising flour

40 grams butter (chilled)

Two thirds a cup of milk

Quarter cup of brown sugar

100 grams pie apple

Custard to serve (optional)


Method -

  1. Preheat oven to 190C/170C fan-forced. Grease a 6cm-deep, 22cm round cake pan. Line base with baking paper. Sprinkle with 1/3 cup walnuts. Drizzle with 1/3 cup honey.

  2. Sift flour into a bowl. Rub in butter until mixture resembles breadcrumbs. Using a butter knife, stir in milk to form a sticky dough, adding extra milk if needed. Turn onto a floured surface. Knead gently until smooth, adding extra flour if needed.

  3. Roll dough out to a 20cm x 40cm rectangle. Combine sugar, vanilla and remaining honey in a bowl. Spread over dough, leaving a 2cm border on all sides. Top with apple and remaining walnuts. Carefully roll up dough from 1 long side. Trim ends. Using a serrated knife, cut into 8 slices. Place slices, cut-side up, in pan.

  4. Bake for 35 to 40 minutes or until golden and scrolls sound hollow when tapped. Stand in pan for 5 minutes. Turn onto a wire rack over a tray. Enjoy!
